Peach Tart

Looking for an easy and very impressive Summer dessert you can whip up in no time?! Look no further. This Peach Tart is something your guests will be talking about for months!

Ingredients

  • 7 oz almond paste, grated
  • 2 tablespoons softened butter
  • 1/3 cup granulated sugar
  • 2 eggs
  • 2 tablespoons all purpose flour
  • 1 sheet puff pastry, defrosted
  • 2-3 peaches, sliced
  • 1 tablespoon shelled pistachios
  • 1 egg- for an egg wash

Instructions

  1. Preheat your oven to 350 degrees F
  2. In a bowl with an electric mixer beat together the grated almond paste, butter, sugar, and eggs until smooth
  3. Add the flour and mix until smooth and set aside
  4. On a floured surface, roll out the puff pastry dough until it is big enough to fit an 11 x 7 inch tart pan
  5. Roll out the puff pastry over the pan, press it down into the bottom and sides, and cut off the excess dough on the sides
  6. Put the almond paste mixture at the bottom of the pan and spread evenly
  7. Arrange the sliced peaches on top how ever you would like and sprinkle the top with the shelled pistachios
  8. In a small bowl whisk an egg and brush the sides of the dough with the egg wash to make sure the crust gets beautiful and golden brown
  9. Put the tart in the oven and let it cook for 30 minutes
  10. That’s it! This recipe is so easy and everyone will go crazy over it. Yum!

    So good! Only problem I had was with the almond paste. It got hard to grate towards the end. Would a food processer work as well, or should i just suck it up?

      Yea, towards the end the almost paste starts to get soft from the heat of your hands. I recommend just sucking it up πŸ˜‰ If it really bothers you just grate half and then place the paste in the freezer for a few minutes before grating the rest! Help this helps.
