
Pecan Encrusted Goat Cheese Salad with Orange Vinaigrette*

Ingredients
- Head leaf lettuce ( or any other lettuce you'd like)
- Half red onion, sliced thin
- 1 orange
Orange Vinaigrette
- zest of 1 orange
- juice of the orange after segmenting
- salt
- pepper
- 1 teaspoon Dijon mustard
- 1/3 cup olive oil
Goat Cheese Medallions
- Goat cheese (I use about 2 oz per person)
- 1 cup chopped pecans
- olive oil for frying
Instructions
- This salad is too good. I have a serious obsession with goat cheese. Then, you put a pecan crust on it and top it with an orange vinaigrette?!... forget about it. Ok, time to assemble this gorgeous salad. Cut your lettuce of choice and put in your salad bowl along with the red onion slices. In a small bowl put the zest of the orange in it. Cut the top and bottom of the orange off and set it cut side down. With your knife following the curve of the orange cut off the peel and white pith so only the sweet orange is left. Taking the orange in your hand, and over the bowl with the zest, use your knife and carefully cut on the side next to the white membrane just until you reach the middle of the orange. Take your knife and cut on the other side of the segment so it comes out. Put your segments in your salad bowl and squeeze all the juice from the orange in your bowl with the zest. To the orange juice add some dijon mustard, salt, pepper, and drizzle in the olive oil while whisking. Whew! You can do it. It's not as hard as I'm making it sound. Now time for the goat cheese medallions. Heat up a pan on high heat with a little olive oil. Take about 2 oz of goat cheese, or however much you want, and pat it into a medallion. Put the medallions onto a plate with the chopped pecans and cover them, patting it down to make sure the pecans stay! When the oil is hot, put the goat cheese in the pan and let cook for about 1 minute on each side. Make sure you don't leave it for too long because it melts very quickly! Take out of the oil and set on a paper towel. Add the vinaigrette to the salad, toss it, put the goat cheese on, and serve! So fresh and delicious. Enjoy!
