
Pyure Pumpkin Blondies*

Ingredients
- 2 sticks butter, room temperature
- 1 cup Pyure Stevia (or any other all natural sweetener)
- 1 egg
- 3/4 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 cup uncooked oats
- 2 cups all purpose flour
- 1 teaspoon baking soda
- pinch salt
- 1 teaspoon nutmeg
- 3 tablespoons cinnamon
- 1 bag (12 oz) semi sweet chocolate chips
Instructions
- When my good friends at Pyure Stevia asked me to come up with a good fall dessert I knew just what to make. These delicious blondies are packed with tons of delicious fall flavors with the pumpkin and cinnamon. You will never know that it is made with an all natural sweetener and not real sugar. The first thing you want to do is preheat your oven to 350 degrees F. In a bowl with an electric mixer cream together the butter and Pyure Stevia. To that add the egg, vanilla extract, and pumpkin puree. Mix together until smooth. To the wet ingredients add the oats, all purpose flour, baking soda, salt, nutmeg, and cinnamon. Give it a quick mix to incorporate everything. Add in the chocolate chips and mix one last time. Add the blondie mixture to a greased 19 x 3 inch pan and smooth it down so it is even. Put in the oven and bake for 30 minutes, or until a cake tester comes out clean. Let cool slightly and serve! Pyure-ly delicious. 🙂
