
Strawberry Basil Mojito*

Ingredients
- Basil Simple Syrup:
- 2 cups sugar
- 2 cups water
- 15-20 fresh basil leaves
- Ingredients for 1 Mojito
- 3-4 ripe strawberries, cut in quarters
- 5 basil leaves, cut
- half a lime, cut in wedges
- 1-2 oz white rum (or more if you like them a little stronger 😉 )
- 1 oz basil simple syrup
- club soda
Instructions
- As soon as Summer hits, that means it's mojito time. Living in South Florida they're a definite cocktail staple. We grew up on them! My mom use to even put them in my bottle. {totally joking don't call child services on her} We've made so many different variations of the mojito I can't even count, but this one is one of my favorites! The classic mojito is made with mint but this is a delicious twist with the basil. The first thing you want to do is make your simple syrup. In a pan over high heat add your water and sugar. Stir to dissolve. Bring the simple syrup to a boil and one you see all of the sugar has dissolved turn off the heat. Add in the basil and let steep until the syrup is cool to the touch. In a glass add your cut strawberries, basil leaves, and lime wedges. With a back of a wooden spoon or muddler, muddle all the ingredients together. Once everything is smashed to perfection add ice to the glass along with the rum, simple syrup, and top with club soda. Stir together and garnish with a fresh strawberry or basil leaf. Hellooooooooo deliciousness! I could drink these all day. Actually, I just might do that now. Cheers!
