Ultimate Avocado Toast

Ever heard of the very popular breakfast recipe ‘avocado toast’? Well, I’ve taken that recipe and kicked it up like 1,000 times. This recipe is so easy/delicious/impressive it will become your go-to breakfast or brunch!

  • 1 slice of good quality crusty bread
  • 6-7 asparagus, end trimmed
  • olive oil
  • salt
  • pepper
  • 1/4 teaspoon lemon zest
  • 1 small Haas avocado
  • Juice of 1/2 lemon
  • 1 small clove garlic, grated
  • 1/8 teaspoon red pepper flakes
  • 3 slices prosciutto
  • Parmesan
  • 1 egg, fried


  1. Preheat your oven to 400 degrees F
  2. The first thing you want to do is roast your asparagus! On a sheet tray add the trimmed asparagus and lightly drizzle with olive oil. Sprinkle with a little salt, pepper, and grate a little lemon zest over them. Let them roast in the oven for 10 minutes
  3. About 5 minutes into cooking add a slice of bread to the oven to toast
  4. While the asparagus are cooking smash a ripe avocado with your fork and to the avocado add salt, pepper, lemon juice, and red pepper flakes. Set aside
  5. In a skillet over medium high heat add a little butter and fry an egg
  6. Now it’s time to assemble everything!
  7. Take your toasted bread and add the smashed avocado, then slices of proscuitto, then the roasted asparagus, a sprinkle of Parmesan, a squeeze of lemon juice, and then top it off with a fried egg
