Ingredients
- 1 tablespoon butter
- 1 small onion, chopped
- 1 garlic clove, minced
- 3 cups leeks, washed and chopped
- 3 cups potatoes, peeled and chopped
- 1 1/2 quarts (6 cups) chicken stock
- 1 1/2 cups cream
- salt
- pepper
- chives (optional)
Instructions
- As you all should know (ok, no one cares but me) it's Julia Child's 100th birthday this month! She is the queen of food. I'm obsessed. You know that movie Julie and Julia?... that's basically me. But I'm not famous. Anyways, in honor of her birthday I wanted to make the classic French soup, Vichyssoise. Vee-she-swah. There, you can say it! It sounds super fancy but it's really not... it's just a chilled potato and leek soup. Pronouncing it the French was sounds way fancier though, so say it like that. Everyone will be impressed. The first thing you want to do is preheat your pan over high heat. Add the butter and let melt. Add the onions and garlic and cook for about a minute. Add the leeks and let cook for another minute or so. Add the potatoes and the chicken stock and bring to a boil. Cook until the potatoes are fork tender, about 10 minutes. Once the potatoes are cooked it's time to blend! Blend a little at a time and put in another clean bowl. Once it's all pureed add the cream and season with salt and pepper. Let cool and put it into the refrigerator. When you're ready to serve ladle it into a bowl and sprinkle some fresh cut chives on the top. Happy birthday Julia! Bon Appetit!
