Banana Pudding*

- Pudding:
- 4 cups whole milk
- 2 egg yolks
- 2 whole eggs
- 1 1/3 cup sugar
- 1/4 cup cornstarch
- pinch salt
- 4 tablespoons butter
- 1 teaspoon vanilla extract
- Whipped Cream:
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Box “Nilla” wafers
- 5 bananas, sliced
Instructions
- I love love love LOVEE banana pudding. I mean, come on… who doesn’t? Now… imagine pudding with homemade pudding and whipped cream instead of jello instant pudding and cool whip. Mind. Blown. The first thing you want to do is make that decadent homemade pudding. In a heavy bottomed pan over medium high heat add the milk, egg yolks, eggs, sugar, cornstarch, and salt. Whisk together to combine and let it come up to a simmer. Let it simmer, stirring constantly for about 6-8 minutes. It thickens up quickly. The best way to test if your pudding is done is to take a wooden spoon and dip it the pudding, then with your finger run a line down the middle. If the pudding doesn’t run together you know it is ready! Turn the heat off and add the butter and vanilla extract. Stir until the butter is melted. Transfer the pudding to a bowl, put plastic wrap on the top so it is touching the pudding, and put in the refrigerator. Let cool for at least 2-3 hours. Once the pudding is cooled make your whipped cream. In a bowl with an electric mixer mix together the whipping cream, powdered sugar, and vanilla extract until stiff peaks. Now it’s time to assemble! In your trifle dish, bowl, or dish, put a layer of “Nilla” wafers on the bottom. Next add a layer of pudding, a layer of the bananas slices, then a layer of whipped cream. Keep layering the wafers, then pudding, then bananas, and finish with the whipped cream. I like to crumble a few wafers on the top to finish. That’s it! Seriously people this is almost as easy as doing the instant pudding and 1000% better!! I made this for a family cookout and there was not a single bite left. Perfect Summer dessert. Enjoy!

The pudding looks great but I don’t like those Nila Waffers. My Mom used to try and pass those off on us as cookies when I was a kid. There not cookies though, I think there some kind of medicine, at least thats what they taste like. Those and Fig Newtons should both be taken off the cookie isle and put next to the cough medicine.
How about peanut butter cookies? Peanut butter and banana are great together.
