DILL ROASTED POTATOES*

- 2 tablespoons unsalted butter
- 1 1/2 pounds fingerling potatoes, rinsed but not peeled
- 2 tablespoons chopped fresh dill
- Want a ridiculously easy one pot side dish? Then this recipe is for you. It’s a great way to spice up that boring ol’ potato. The first thing you want to do is heat your large heavy-bottomed pan or dutch oven over medium high heat and let the butter melt. Add your whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook for 20-25 minutes. Every once in awhile shake the pot so the potatoes don’t burn but don’t take off the lid! After 20 minutes stick a small knife in them and if they are tender then they are done. Turn off the heat but leave them in there for another 5 minutes to steam. Add the chopped fresh dill, toss, and serve. Delicious, easy, and very elegant! Who said side dishes have to be boring?
