  1. 6 Jumbo shrimp or 8 smaller shrimp
  2. 2 heads romaine lettuce
  3. 1 ear corn
  4. Cherry tomatoes (cut in half)
  5. 1/2 cucumber, diced
  6. Chopped red onion
  1. Juice from 2 limes (about a 1/3 cup)
  2. 2 tablespoons chopped fresh cilantro
  3. 1 teaspoon Dijon mustard
  4. 1 teaspoon Honey
  5. 1/4 teaspoon Chili powder
  6. 1/4 teaspoon ground Cumin
  7. salt
  8. pepper
  9. 1/3 cup oil
  1. The first thing you want to do is preheat your grill or grill pan to high heat and spray with non stick cooking spray
  2. Season the shrimp on both sides with salt and pepper
  3. To the grill add the shrimp, romaine hearts that you cut in half longways, and corn
  4. Cook the shrimp about 2-3 minutes on each side until cooked through
  5. Cook the romaine lettuce until slightly charred, about 5 minutes
  6. Cook the corn, rotating occasionally for about 8-10 minutes, until slightly charred on all sides (this takes the longest to cook)
  7. While everything is grilling make your dressing. In a small bowl add the fresh lime juice, cilantro, dijon, honey, cumin, chili powder, salt and pepper. Stir to combine and drizzle in the olive oil. Set aside
  8. Now it's time to assemble! On a plate add the grilled romaine and top with the grilled shrimp, cherry tomatoes, diced cucumber, and red onion. Carefully cut the kernels off the corn and add to the salad.
  9. Add the vinaigrette right before serving, and enjoy! Happy Summer!
