
MEXICAN CORN ON THE COB*

Ingredients
- 1 ear of corn
- 1/2 teaspoon Mayo
- juice of 1 slice of lime
- 1/2 teaspoon chili power
- salt
- 1 tablespoon Queso Freso or Cotija cheese
- 1 teaspoon chopped fresh cilantro
Instructions
- Elote, or Mexican corn on the cob, is beyond words good and so easy to make. I’m serious… you have to make this at your next BBQ. I honestly thought my dad was going to lose his mind he loved it so much. You have the delicious sweet fresh corn with the tang from the lime juice and the freshness of the cilantro and the smokiness from the chili power and coolness from the queso fresco. Can I get a Joey Lawrence Whoa.?! Ok, first thing you want to do is cook the corn. You can either do this in a pot of boiling water or on the grill it doesn’t matter. Cook the corn for about 5-6 minutes until done. To the cooked corn spread on the mayo and squeeze the lime on it. Add the chili powder and salt all over the corn in an even layer. To the top of that add the crumbled queso fresco and cilantro and you’re all done! This recipe is so easy and a great way to spice up a regular corn of cob. Happy Summer!

Delicious! I used to eat at least two whole cobs on Saturday and Sunday when I used to sell knives at the outdoor swap meet in Albuquerque, NM! That was like the #1 at the food stalls!
