Fall means Pumpkin Spice EVERYTHING! It gives me an excuse to feed into this addiction and I'm not upset about it. This breakfast treat is super easy to make and everyone will be so excited about homemade scones for breakfast! Yay for pumpkin!
Scones
- 1 egg
- 1/2 cup pumpkin puree
- 3 tablespoons half and half
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 6 tablespoons cold butter, cut into pieces
Spice Glaze
- 1 cup powdered sugar
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 2-3 tablespoons half and half
Instructions
- This recipe is such a great Fall breakfast because you can whip it up in no time at all and everyone will LOVE them!
- The first thing you want to do is preheat your oven to 425 degrees F
- In a small bowl combine the egg, pumpkin puree, half and half, and vanilla extract. Stir to combine the wet ingredients
- In a larger bowl add the flour, sugar, salt, baking powder, cinnamon, nutmeg, ginger, and cloves. Mix together to combine
- Add the cold cut up butter to the dry ingredients and using your fingers pinch the flour and butter together like you're snapping your fingers until there are no large chunks of butter left. Watch the video for help!
- Once the butter is mixed in add the wet ingredients to the dry and stir to combine completely. Don't worry, the batter will seem wetter than it should be. Pour the batter onto a floured piece of parchment and press into a 12 inch circle that is about 1 inch thick
- Flour your knife and cut the dough into 6 to 8 slices. Slide the parchment paper onto a baking sheet and put it into the oven
- Let the scone bake for 15 minutes. One they're done cooking take it out of the oven and let it cool slightly while you make the glaze
- In a bowl add the powdered sugar, nutmeg, cinnamon, cloves, and ginger. Stir the mixture to combine and slowly add the half and half, one tablespoon at a time. You don't want it to be too thick or too thin so adding it slowly is the best way to control the thickness! Once the glaze is the correct consistency drizzle it all over the warm, delicious, pumpkin-y scones. That's it! This recipe will be one of your go-to's because of how easy and crazy delicious it is!
