
Roasted Beet Salad*

Ingredients
- 6 beets, peeled and sliced
- olive oil
- salt
- pepper
- 1/3 cup balsamic vinegar
- 1 teaspoon maple syrup
- 5-6 cups mixed greens
- 1/2 cup pistachios
- 1/2 cup goat cheese

- Ever crave beets? Me too! Ever crave beets and goat cheese? Me too! This salad is one of my favorites and if I'm ever out at a restaurant and see a roasted beet salad I have to get it. The beets can be cooked ahead of time, as well as the balsamic reduction, and then assembled before you're ready to eat. Be careful when you're peeling the beets because the red beet juice will stain! Ok, start by preheating your oven to 400 degrees F. Slice the beets and toss in a bowl with olive oil, salt, and pepper. Put on a sheet tray in an even layer and put in the oven. Let them cook until knife tender, about 30 minutes. While those are cooking make your balsamic reduction. In a small saucepan over medium heat combine the balsamic vinegar and maple syrup. Let it simmer until it is reduced by half, about 5-6 minutes. Once the beets are cooked time to assemble! To your plate add the mixed greens, beets, goat cheese, pistachios, and then drizzle everything with the balsamic reduction. That's it! How easy and fancy is that?
