Cucumber “Quarantini”

It’s the weekend!! I think?? Anyone else going a little stir crazy these days? I long for normalcy and the day restaurants and bars will be back open and I can go and have a nice dinner and a delicious cocktail. Until that glorious day I’m trying to keep myself busy by cooking all the time and making fun cocktails. This cucumber “quarantine” is ABSOLUTELY delicious- AND, most of you will have all of the ingredients already! Why not treat yourself after a long hard day of doing not much of anything. Irish Soda Bread

St. Patrick’s Day is such a fun holiday. I always make corned beef & cabbage along with green beer (of course) and anything else green. This year I’m going to go more traditional with my menu and make an Irish classic recipe- soda bread! This quick bread doesn’t require any yeast or proofing which saves so much time. It’s delicious with stews or just some Irish butter and jam- yum!

Spring Risotto

Risotto is one of my favorite dishes. It’s so decadent, delicious, and feels so gourmet. HOWEVER- it’s really not difficult to make!! This Spring inspired risotto is the perfect way to spring into the new season the most delicious way possible. Also what I love about risotto is this could be an entree or side- either is a great option!
