
Herbed Lobster Rolls

Let's just all agree that Lobster Rolls are delicious. Surprisingly enough they really aren't hard to make either! My recipe is a twist on the classic New England favorite and everyone will love it
Ingredients
- Hoagie Rolls
- 2 cooked lobster tails (about 1 pound of meat)
- 1 stalk of celery, chopped
- 1/4 cup mayo
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh dill
- zest of half a lemon
- juice of half a lemon
- salt
- pepper
- Iceberg lettuce
Instructions
- This recipe is SO delicious and easy to make. The perfect picnic lunch because you can make it ahead of time! If you can't find pre-cooked lobster tails then just poach your own. I recommend doing this anyways! Put the lobster in water that is just under a simmer and cook until the flesh is white and cooked through, about 5 minutes
- Toast your hoagie rolls and set aside
- In a bowl add the chopped lobster meat, chopped celery, mayo, chopped fresh chives and dill, lemon zest and lemon juice, salt, and pepper
- Give it a good mix until everything is combined
- On your toasted hoagie rolls add some fresh iceberg lettuce and a big scoop of the lobster. That's all! In under 5 minutes you can have the most delicious sandwich. You might want to triple this recipe... it will go fast
