Roast Beef Sandwich with Horseradish Cheese and Pesto*

- half loaf of ciabatta bread
- 1/2 pound of freshly sliced deli roast beef
- 1/4 pound horseradish cheese, sliced thin
- 2 tablespoons pesto
- Ever take a bite into a sandwich and just go "WOW"? Well, you will when you bite into this. This is such an easy sandwich to throw together and take with you. Move over boring ham and cheese! Get outta here PB&J! Ok, so the first thing you want to do is heat up a pan or griddle pan over low heat. If you just want to make this a cold sandwich it will be equally as delicious don't worry. This recipe only uses half a loaf of ciabatta but you might want to double the recipe and make the whole loaf because it's so good. Cut your ciabatta bread in half and put on as much or as little mayo as you'd like on each side. Spread on the pesto to one side and add your roast beef and horseradish cheese. Put the top on the sandwich and wrap it in aluminum foil. Put the sandwich on the pan or griddle pan if you're heating it and weigh it down with another pan. Let it cook on one side for about 5 minutes and flip over to cook for another 5 minutes. You want the cheese to be melted. Once the cheese is melted take out of the aluminum, slice, and serve. Get ready for a party in your mouth!
